5 Freeze-Dried Vegetable Snacks You’ll Love
When most people think about freeze drying, candy and fruit usually come to mind first.
Vegetables?
Not so much.
That changed for me the first time I experimented with zucchini from my garden. I wasn’t trying to create a snack—I was simply looking for another way to preserve my harvest. What I discovered was a light, crispy treat that disappeared almost as fast as I could make it.

🥒 1. Ranch Zucchini Chips
Zucchini has become one of my favorite vegetables to freeze dry.

This has quickly become one of my newest favorites.

It’s a fun twist on a classic summer vegetable and makes a great conversation starter at farmers markets and festivals.
🌶️ 3. Bell Peppers
Bell peppers may not sound like a snack, but they’re one of the most practical vegetables I freeze dry.
They’re perfect for tossing into soups, casseroles, omelets, and skillet meals, and they rehydrate beautifully.

I always keep freeze-dried peppers in my pantry. It saves me from making an extra trip to the grocery store when I only need one pepper for dinner.
